Lime is a shrubby tree with a globose fruit, 2.55 cm in diameter (1-2 inch), that is yellow when ripe but usually picked green commercially. It is smaller has a higher acidity,
a stronger aroma and a good source of vitamin C. Limes are grown all year round and are usually smaller and sweeter than lemons. It is a very common ingredient in Mexican, Southwestern United States, Vietnamese , India and Thai dishes and many varieties of pickles are made. It is also considered to have nutritional and medical properties too.
